April 29, 2025 — Maxwells Trading, the latest restaurant from Chef Partner Erling Wu-Bower and Josh Tilden of Underscore Hospitality — and a foundational part of LG Builders’ sustainability and reuse-focused project, 1516 W Carroll Ave — has recently received numerous industry and editorial accolades both locally and globally.
A recent addition to the Michelin Guide, Maxwells Trading has been ranked #3 on Robb Report’s “10 Best New Restaurants in America” roster and landed a spot as one of Esquire’s “Best New Restaurants in America.” It was also named one of The New York Times’ “25 Best Restaurants in Chicago Right Now.”
Locally, the establishment was named “Best New Restaurant” by Eater Chicago, and one of the city’s best new restaurants by Chicago Magazine.
Continuing their run of recognition, Chefs Chris Jung and Erling Wu-Bower have also been named finalists for the prestigious 2025 James Beard Award for Best Chef: Great Lakes, the winner of which will be announced at a ceremony at Chicago’s Lyric Opera in June.
